Browned Butter Salmon



INGREDIENTS:

1 pound salmon cut into 2 servings
2 T brown sugar
4 T butter (2 T melted)
1 T olive oil
2 t lemon juice

DIRECTIONS:

1. Mix olive oil, lemon juice and melted butter and pour into 8x8 baking dish.
2. Pat salmon dry and put skin side down into dish.
3. Sprinkle salt and pepper to season.
4. Put pat of butter on each portion.
5. Sprinkle brown sugar on top.
6. Pour reserved liquid on fish portions and bake for 20-25 minutes on 350* or until light and flaky. Check about every 10 minutes and reapply butter mixture to top of salmon. After it's cooked let it rest for about 5 minutes and drizzle remaining browned butter on salmon.

I served my salmon on top of fresh spinach greens with a side of wild rice.
