Recipe on a Budget: Cauliflower Cheese Soup

Cauliflower Cheese Soup
The finished product!  So yummy.


 So easy, So good!

Ingredients:
1 head cauliflower chopped
2 potatoes cubed
1 cup celery
1 cup onion chopped
4 chicken bullion cubes
1/4 cup butter
1/4 cup all-purpose flour
1 12 oz can evaporated milk
4 oz shredded cheddar cheese
Salt and Pepper

Directions:
  1. In large saucepan combine cauliflower, potatoes, celery, onions, and bullion cubes.  Cover with water and boil for 10 minutes or until tender.  Keep 3 cups of the cooking liquid and discard the rest.
  2. In a separate saucepan melt butter.  Once melted, stir in flour and cook for a couple minutes.
  3.  Gradually stir in the evaporated milk and cook until thickened.  Stir in vegetables with the cooking liquid.  
  4. Stir in the cheese until melted and add salt and pepper.
The cut up veggies, waiting to be cooked.
