Ingredients:
1 head cauliflower chopped
2 potatoes cubed
1 cup celery
1 cup onion chopped
4 chicken bullion cubes
1/4 cup butter
1/4 cup all-purpose flour
1 12 oz can evaporated milk
4 oz shredded cheddar cheese
Salt and Pepper
Directions:
- In large saucepan combine cauliflower, potatoes, celery, onions, and bullion cubes. Cover with water and boil for 10 minutes or until tender. Keep 3 cups of the cooking liquid and discard the rest.
- In a separate saucepan melt butter. Once melted, stir in flour and cook for a couple minutes.
- Gradually stir in the evaporated milk and cook until thickened. Stir in vegetables with the cooking liquid.
- Stir in the cheese until melted and add salt and pepper.
